On an organic farm outside Boulder, CO, Chef Paolo Neville developed a deep respect for the simplicity of fresh produce and a connection to the land. He realized cooking came naturally. After a thirty year career and a decade in the California wine country Neville returned to Colorado where he is the executive chef at 95A Bistro & Co in Lafayette He has two amazing boys with whom he spends most of his free time and has a passion for helping families in need and giving back to his community.
In the early nineties, Paolo began working at the Med under Master Chef Raimondo Laudiso and served as sous chef for five years.
Armed with an extensive repertoire of dishes from the Mediterranean, Paolo moved to San Francisco in 1998. After a year at an upscale French brasserie, Paolo accepted a head chef position at the Bistro at Glen Ellen, in the heart of the Sonoma wine country. While overseeing the Bistro, Paolo helped open Wild Fox Mesquite Fired Kitchen, an eclectic all-American steakhouse. He remained the head chef for the next three years,
Seeking to expand his passion, Paolo accepted a chef position at St. Francis Winery in Santa Rosa California and spent the next three years executing flawless wine and food pairings under Executive Chef Todd Muir. Before returning to Colorado, Paolo and Chef Muir prepared a seven course meal at the infamous James Beard House in New York City.
Landing back at the Med, Paolo also served as chef de cuisine at the Brasserie Ten Ten. In spring 2008, he became executive chef for Legacy Ridge and Heritage-Westmoor golf courses, where he continued a tradition of freshly prepared dishes made extensively with local Colorado ingredients as well as monthly wine dinners.
As the Chef and managing partner at Bistro Elaia Paolo‘s desire to prepare healthy, great tasting food is evident in the dishes available through Bistro Elaia’s healthy counter as well as their extensive gourmet catering menu. He used his talents to create a unique, fresh menu that fits perfectly with the concept of the Anschutz Health and Wellness Center.
Chef Neville helped to develop a dazzling menu at 95A Bistro & Co Lafayette, Colorado. that customers can continue to enjoy.
He has two amazing boys with whom he spends most of his free time and has a passion for helping families in need and giving back to his community. Then in 2022 Chef Paolo launched Urban Hotdog Collective and is continuing to provide his catering expertise and experience for everyone.
